Sinigang na Baboy sa Pakwan (Pork Stew in Watermelon)

I have never met this dish till I was treated to a nice dinner by the Puno family ( owners of Doon Thai Restaurants) in MANAM in SM last November 2019.

The new experience of sinigang with watermelon was a truly delicious one with the tug-of -war flavors of the sweetness of the watermelon and the sourness of the sinigang mix, swirling in your mouth.

I was so overjoyed that I decided to cook it in my kitchen and came up with my homemade

Ingredients:
1. 1 and 1/2 pound of pork chunks ( with some fat)
2. 7 cups of water
3. 1 pork Knorr bouillion
4.1 small onion sliced
5. 2 cups of spinach
6. 2 cups of cut string beans
7.4 chili serrano
8. I small watermelon ( 3 cups of watermelon chunks)
9. 1 cup of sliced tomatoes
10 1 cup of gabi ( taro) cubes
Recipe:
1. Layer the pot with the following , from the bottom of the pot.
a. start with the watermelon chunks
b. Tomatoes
c. Gabi ( taro cubes)
d.Pork chunks
2. Add 7 cups of water then set to a boil ( Maybe a good hour)Add the knorr pork sinigang boullion.
3.Add veggies – string beans , chile serrano , onions. Cook for 5 to 10 minutes
4.Add patis for flavor.
5. Serve with white steamed rice.
