BAGOONG RICE

It was so hot inside my house because my AC gave up because of the extreme heat this summer time. Anyways I decided to cook something simple so I can bear this heat while cooking. I have baby green mangoes so I thought bagoong rice will go well with it. Usually bagoong rice will go nicely with crispy fried pork but I thought Ill just have some crunchy veggies to go with it. Here goes and try it.You can pair this rice with fried fish ot pork.
INGREDIENTS:
1. 2 cups of boiled white or brown rice
2. 2 tbsp of sauteed bagoong
3. 2 tbs of oyster sauce
4. 6 cloves of crushed garlic
5. 2 beaten eggs
6. 1 tomato sliced
7. 3 scallions slices
8. 2 baby green mangoes sliced
9. 1/2 singkamas julienned
RECIPE
1. Fry beaten egg in little oil and spread in pan till it is thinly spread. Once cooked set aside and cut the fried egg into thin strips.
2. Sautee garlic bagoong oyster sauce and sugar. Add boiled rice and mix well.
3. Put the rice in a bowl and invert to a plate to have a nicely shaped mound of rice.
4. Put strips of egg on top.
5. Mix with fresh tomatoes, scallions, singkamas (for that refreshing crunch) and baby green mangoes.
6.Pair with fried pork or fried fish.
